How to switch on Google Analytics remarketing in WordPress through Yoast's plugin, without touching any code, and which setting actually does the work.

Plug and play is my motto wherever possible. That is why I am such a fan of the Google Analytics for WordPress plugin by Yoast, currently at version 4.3.3. It does not just save you from pasting the Google Analytics code into your WordPress site, it also gives you a pile of useful configuration options behind checkboxes with short, understandable descriptions.
If you want to enable Google Analytics for remarketing, though, you have to get your hands dirty. Google explains that remarketing needs a short part of the code swapped out, and there is more on that in the Google documentation. To get the same result inside the plugin, open the advanced settings and complete the "Host ga.js locally" entry with the DoubleClick statistics endpoint.
After that you only create a new remarketing list in your Google Analytics profile, and the audience data starts coming in.
